Mama Burger- DELICIOUS veggie burger
Hands down one of my favorite veggie burger recipes EVER. Even nonvegetarians love these, theyre all gone within a day when I make them at home! Super healthy and delicious. Choose the baking option for a healthier alternative. Leave out the cheese for vegans if you please.

Mama Burger

Preparation time: 20 mins - Cooking time: 20 mins - Makes 8-10 burgers
1 tbsp olive oil (if using frying pan)
2 scallions, chopped
1 tsp. garlic, chopped
1/2 whole vidalia or other sweet onion
3 cups drained garbanzo beans
1/4 cup tanini
3 eggs
1 carrot, chopped
1/4 cup parmesan cheese
1/4 cup feta cheese
1/2 tsp. salt
pepper to taste
fresh rosemary to taste
1 1/2 cups bread crumbs

1. Preheat oven to 350 degrees or prepare a frying pan with a small amount of vegetable oil.
2. Put all ingredients except bread crumbs into a food processor. Pulse until well combined. Put ingredients into a large bowl, add bread crumbs, mix well. Form into patties.
3. If baking, place on cookie sheet and bake for 20 minutes. If frying, cook until lightly browned on each side and warm in the middle.

Note: These can be put in a freezer or refridgerator for later use. They will keep in the freezer for two months, and in the refridgerator for one week.

That sounds amazing! Thanks for posting! What might one use as a vegan binding agent, instead of the eggs?

Ah, I haven't made these since I transitioned into becoming a vegan, so I actually have no clue.
Next time I make them I will have to experiment with different ingredients. Sorry about my lack of info!

As binder you can replace eggs with olive oil (or any other veg oil) - 1 1/2 Tbsp oil + 1 1/2 Tbsp water = 1 egg
You could use bread crumbs mixed with water
mashed potatoes 1/4 Cup = 1 egg
cooked oatmeal
Any type nut butter (actually Tahini probably should be in this category, but..)
1/4 C tofu mixed (pureed) with 1 Tbsp flour = 1 egg
soy cream
Mix 1 Tbsp ground flax seed with 3 Tbsp hot water. Set it aside for a few minutes until it thickens. It should be the texture of an egg white, if it isnt, heat the mixture until it thickens. This mix equals one egg.
Chia seed can be used the same as flax seed.

I'd just leave it out, and maybe add a little water - I bet it would work without the egg.
