Texas Pecan-and-Avocado Salad

This recipe is suitable for a: vegetarian/vegan diet

Preparation Time: 15 minutes

Serves: 8



1 head Bibb lettuce

2 avocados,thinly sliced

1 red bell pepper,thinly sliced

1 yellow bell pepper,thinly sliced

1/2 c chopped pecans

Tangy Dijon Dressing:

1/3 c olive oil

2 tbs lemon juice

2 tbs water

1 tbs sweetener of choice

2 tsp Dijon mustard

salt and pepper to taste



Whisk together dressing ingredients,store and refrigerate in an airtight container.

Arrange lettuce leaves lettuce leaves on a serving platter.Top with avocados,bell pepper slices;sprinkle with pecans.

Drizzle with desired amount of dressing.

Additional comments:

You can tear the lettuce into pieces and gently toss ingredients if you like.

I like this with thinly sliced red onion.

Leftover dressing can be stored for about 1 week.
