Bean and Capsicum Salad ( Healthy Salads Recipe)

1 1/2 cups soaked and boiled rajma (kidney beans)
1 1/2 cups soaked and boiled kabuli chana (white chick peas)
1 red capsicum
1/2 tsp oil for brushing
1/2 cup finely chopped onions
1/4 cup finely chopped coriander (dhania)
1 1/2 tbsp lemon juice
2 tsp finely chopped green chillies
1/2 tsp chilli powder
salt to taste


Pierce a fork through the capsicum, brush oil evenly over it and roast on a slow flame till it turns black in colour from all the sides.
Immerse the capsicum in cold water, remove the burnt skin, stem and seeds and thinly slice it.
Combine all the ingredients including the capsicum in a deep bowl and toss well.
Serve chilled.

I love better the one with feta:

for 4 serves you need:

500 grams green stringless beans, topped and tailed
150 grams organic feta, crumbled
2 red capsicums, roasted, peeled and sliced
A few fresh mint leaves, sliced

25 mls red wine vinegar
75 mls extra virgin olive oil
Sea salt and freshly ground black pepper

Blanch the beans in boiling salted water for 1 minute, remove and plunge into iced water for 1 minute or even less.
Mix all ingredients with dressing in a large bowl and serve it with crusty bread
