Amazing Spanish Rice

This recipe is suitable for a: vegetarian/vegan diet

Preparation Time: 20 minutes

Serves: 6-8



12 ounces very ripe and cored tomatoes

1 med white onion

3 Jalapeno peppers

2 cups long grain white rice

1/3 cup vegetable oil

4 Garlic cloves, minced

2 cups vegetable broth

1 tbs tomato paste

1 1/2 tsp salt

1/2 cup minced fresh cilantro

1 lime



1)Preheat oven to 350 degrees

2)Puree tomatoes and onion in blender or processor until completely smooth. Transfer to measuring cup until you get 2 cups worth;discard any extra.

3)remove seeds and ribs from jalapenos. mince and set aside.

4)Place rice in strainer and rinse with water for about 1.5 minutes until water runs clear. shake strainer to ensure all excess water is gone. (very important to follow this step or rice will not come out light and fluffy)

5)heat oil in oven safe sauce pan and place a few rice bits to test for readiness. if they sizzle, pour the rice in and cook til golden brown 6-8 min.

6)lower heat to medium and add garlic and jalapenos- 1.5 min.

7)stir in broth, tomato mixture, tomato paste and salt. Bring to boil

8)Cover pan and transfer to oven. cook for 30-35 min. stir after the first 15 minutes.

9) stir in cilantro and use lime wedges as you please

( recipe taken from recipezaar for mexican rice)

If you can't get ripe and ready tomatoes from the store, you should use canned tomatoes to get better flavor. avoid the hardened, bland tomatoes that are at the store.
