Lentil and Spinach curry - VeggieBoards

I much prefer to use all fresh products and this dish is made pretty much of canned or jarred goods .I was sceptical but after trying it yesterday it is going to become a regular on our dinner table.

 

1 tablespoon of olive oil

1onion finely chopped

2 red chillis sliced

1 teaspoon coriander seeds

2 tablespoons curry paste

2 x 400g cans or jars of lentils

400g can of tomatoes

400g can of coconut milk

300ml / 10floz hot vegetable stock

400g / 14oz spinach

 

1 Heat oil in a large deep pan. Add onions and cook for a couple of minutes. Stir through one chilli, coriander seeds and curry paste

2 Tip in lentils and stir to coat. Add tomato, coconut milk and stock. Bring to the boil and simmer for about 30 minutes

3 Stir through spinach and cook until wilted (about 3-4 minutes). Taste to adjust seasoning.

4 Serve with scattered slice chilli, rice and /or Indian bread

That sounds very good and would be nice and easy to make after work.  I agree with you about the fresh produce but cans or jars are okay sometimes. Thanks for posting the recipe.

This sounds good. smiley.gif And it could easily be made with dried lentils, as they don't require soaking, just extra liquid and more time, and fresh tomatoes if you don't want canned. Thanks for the recipe! smiley.gif
