That is very creative! I pretty much always get avocado cucumber rolls and I really need to try something new to spice things up a bit, this would be great.

I made fruit filled sushi for dinner a few times a couple summers ago. Strawberry was great with balsamic vinegar. I bet apple or pear would be good for the fall, or maybe even some roasted sweet potato or pumpkin for some sweet veggie options.

The most unique I ever had were some Israeli inspired ones at a vegetarian resort in Costa Rica. I forget all the varieties, but one had marinated eggplant. DELICIOUS.
