I found this beautiful image of an incomplete dish. The recipe is for Coconut Black Beans but I can't figure out the rest, I don't even know if it's vegetarian. I did a Google Image search but I didn't find anything. Care to help me make out something based on this?


What I see is:

  • The coconut black beans
  • Baked or raw bananas (better than fried)
  • An avocado mango salad?
  • I was thinking of making some falafel-like burger


I'm not good with mixing flavors so I'd really appreciate your suggestions.


PS: Bananas with legumes are amazing. Try brown lentils with brown rice and raw bananas. Delicious!

I think those are fried plantains.  They could be bananas, but plantains would go fantastic with that kind of meal.   Its a Haitian/Dominican kind of food.  It looks like a banana, but it tastes more like a potato.  But friend plantains are yummy. 


I don't know what the rest of it is.

The thing under the mango salsa looks like a spiced chicken but you could easily sub a fake meat and rub it with jerk spices. Yum!

That awkward moment when your partner walks into the kitchen to find you huddled in the corner with an open container of nooch and a spoon and your mouth encrusted with little flakes...

That's for sure a chicken breast in the picture under the mango stuff.

 Also the bean recipe has honey, so not vegan friendly if you are cooking for vegans too.


I would use dried soaked beans instead of canned beans, add more water and broth and increase cooking time.  Beans taste way better when you cook them from dried then from a can, especially with the spices in the ingredients list.


instead of the chicken id use yams, peel and dice up, coat with olive oil and seasons similar to those used in the beans, roast in the oven 400 for about 20 min.


id combine the salsa and bananas/plantains together, chop up the banana similar to the mango and avocado and mix it all up, would also add a diced chile, cilantro, and red onion.
