Mac 'n Cream Cheese - VeggieBoards

Well this is awkward, there is a thread below this one that also is mac 'n cheese. Though mine is a little different. We...well when I see we, my younger brother yet again requested something strange for dinner.


He wanted mac 'n cheese, we did not have so called cheese, so I went with the next best thing....Daiya Cream Cheese, totally different from that miso one down there.


Ingredients [yeah and mine is less healthy]:


-Soymilk or Soy Creamer [my soy creamer was expired, but this gives it a richer, creamier feel]

-Brown Rice Pasta [elbows]

-Daiya Cream Cheese 

-Earth Balance Butter[optional, not really really recommended]

-Garlic Powder, Onion Powder, Oregano[optiona], Black Pepper, Red Pepper




-Boil water, I just spray the pan with some Pam and then let the water boil somewhat

-When water is boil, throw Brown Rice Pasta elbows into water

-Wait for them to cook, I make them a little al dente do to the fact that they are going to cook in my sauce

-Drain the pasta of water and leave pasta in strainer

-Keep your pan hot

-Just a tiny spoon, tiny spoon of butter [I really do not like a lot of butter, actually in fact this is Optional. because I had less cream cheese than what I normally would use for something like this, I used the butter to add a fuller flavor. It isn't really necessary in fact don't do this at all]

-Pour in some soymilk, not a lot a good amount to coat the bottom

-Put in noodles

-Put in seasonings [I am a weirdo and like my mac 'n cheese with oregano, you don't have to]

-Pour in some more milk

-Then put in the cream cheese to thicken it up

-Let cool, serve and then enjoy

I stole the recipe from my brother when his noodles were boiling and then cooked the rest of it, lol.




I didn't add butter at all and it turned out gooood.

Mmm, that sounds like a great use for that Daiya cream cheese. Thanks for the recipe.
