This isn't my recipe but deserves to be shared! I made this today and it was absolutely spectacular and easy. Tasted similar to the original! I did modify it by cutting the oil in half per serving but doubling the veggies per serving. Next time i make it I'm going to cut the pasta in half since 4oz per serving is too much IMHO. I may add fresh basil during the summer, substitute freshly steamed artichokes when in season and a splash of white wine if I have any in the house. Due to the rather light taste I wouldn't recommend whole wheat pasta. Definitely drain the canned items to lower the sodium.

Johny Carinos Artichokes and Angel Hair Pasta
Prep time: 10 minutes
Cook time: 15 minutes
Serves: 4

Ingredients

4 tablespoons olive oil

2 cloves fresh garlic finely diced

1 cup diced Roma tomatoes

1/2 cup finely diced black olives

1/4 cup capers

1 small jar of Artichoke Hearts, halved

1 16 ounce package Angel Hair Pasta
Instructions

Sauté garlic in olive oil; then, add tomatoes, olives, capers, and artichoke hearts. Sauté ingredients. Serve over pasta.

That sounds really good, I've been meaning to make pasta that doesn't rely so much on lots of tomato sauce or faux cheese.
