spinach and chick pea pasta - VeggieBoards

Omg. Home alone tonight...searching the pantry for some kind of dinner...here is what I came up with. It turned out to be what I call a "definite do over." I wrote down in my little index card box exactly what I put in so I will remember! It was really simple and so good. Let me know what you think;) :
2 med tomatoes, diced
1 med red onion, thinly sliced
3 garlic cloves
1 6oz bag baby spinach, coarsely chopped
1 7.75 oz can garbanzo beans
2 tbls olive oil
2 tbls red wine
1 tbls lemon juice
Salt and pepper to taste.

I tossed it all in together and cooked it down at med heat for maybe 20 or 25 minutes. Long enough that the tomatoes were dissolving and the onions were translucent with still a bit of texture, but not crunch. Guess its a matter of preference. wink3.gif I cooked whole wheat rotini on the side, topped it with the stew/sauce, and ATE.

sounds lovely - and a great 'go-to' meal when you're short of time.  I'd throw in a few chillies or chilli powder to add some heat, but that's just a personal preference.smiley.gif
