Butt-kicking vegetarian burrito recipe

This recipe is suitable for a: vegetarian diet

Preparation Time: 20-30 minutes

Serves: 4



A capful of vegetable oil

1 package of 8-10 wheat tortillas

1 large red bell pepper, diced

1 large yellow bell pepper, diced

1 package of Lipton Mexican Rice

1 tomato, diced

1 1/2 cups grated 2% Mexican four cheese

Optional: Store-bought guacamole, salsa, re-fried beans, and sour cream



Cook Mexican rice as directed on package, set aside. Meanwhile, in a large skillet, heat up vegetable oil and cook peppers through, occasionally stirring for 3-5 minutes. Once cooked, layer peppers, tomatoes, and rice onto each tortilla. Place each one on the skillet for 1-2 minutes or until cheese is melted.

This is a good recipe to make for your folks at home. It's simple and they're so filling, who needs meat? I made this recipe up after eating something similar at a cafe near where I live. I hope you enjoy!
