Seems like you could fill these with any combination of things you wanted.
Ingredients :
Dough
1 T sugar
1 package dry yeast (2 ½ t)
1 C lukewarm water
3 C flour
½ t salt
1/8 t ground ginger
4 T olive oil
Fillings
Spinach
10oz spinach, washed, dried and finely chopped
2 med. Onions, finely chopped
3 T pine nuts or slivered almonds
4 T olive oil
2 T lemon juice
¾ t salt
½ t pepper
½ t nutmeg
1/8 t cayenne pepper
Mix all ingredients thoroughly.
Zucchini and pea filling
2 ½ C ¼ inch cubes of unpeeled zucchini
1 ½ C fresh or frozen peas
1 large onion, finely chopped
4 cloves of garlic, crushed
4 T ground almonds
1 t salt
1 t oregano
½ t pepper
½ t paprika
¼ t cayenne pepper
Mix all ingredients thoroughly.
Instructions:

Dissolve yeast and sugar in ¼ C of the lukewarm water and allow to froth.
Combine flour, salt and ginger in a mixing bowl, add the rest of the water, oil and yeast mixture.
Knead into a dough, adding more flour if necessary. Cover and let rise until double in size.
Form to dough in to 20 balls, let rest for 30 minutes. Roll each ball into a 5 or 6 circle, fill with 2 heaping Tablespoons of filling. Fold the dough over the filling making a half moon shape, seal by pinching the edges together firmly.
Place the pies on a well grease tray, then bake at 350 for 20 minutes or until pies turn golden brown.
