yummy asian tofu stir fry

Ingredients:

olive oil or spray
2 cloves garlic, minced
1 zucchini, chopped
1 yellow squash, chopped
1 head bok choy, chopped
1/2 block of chinese spiced hard tofu, chopped in 3/4 inch cubes
1 tbs soy sauce
2 tbs teriyaki sauce
2 tsp hoisin sauce (these might vary-- check to see if yours is vegan)
1 tbs toasted sesame oil
a pinch of red pepper flakes
1/3 cup slivered almonds, toasted
Instructions:

1) Heat medium sized skillet to medium-high, add olive oil, add your garlic, and saute for about a minute.
2) Add tofu, and stir fry to desired done-ness. Remove from pan (to a plate or something).
3) Heat a bit more olive oil. Add zucchini and yellow squash, and cook until soft, 4-5 minutes.
4) Add bok choy and cook until wilted, about 1-2 minutes.
5) Add tofu, soy sauce, teriyaki, hoisin, sesame oil, and red pepper flakes. Stir gently. Cook for about 1 minute.
6) Serve topped with almonds.
