Stir-fried vegetables and tofu with sweet lime garlicky soy sauce

Suitable for a: vegan diet



1-16oz bag frozen stir-fry vegetables

10oz of extra firm tofu, pressed, thoroughly drained, and cut into approx. 1 inch cubes

1 tbsp vegetable oil


1/4 cup reduced sodium soy sauce

1/4 cup agave nectar or honey

1-2 cloves of garlic, minced

1/4 cup lime juice

zest of 2 limes



Heat a wok or large skillet over medium heat. Add vegetable oil and tofu. Cook tofu until golden brown on all sides and remove from pan.

Add frozen vegetables to pan and stir fry for 3-5 minutes.

Meanwhile, mix together sauce ingredients. To avoid having trouble getting juice from the limes, microwave them for 10 seconds and then while applying pressure, roll it on your counter top. It will help release the juice.

Return browned tofu and add the sauce to the pan. Cook for another 2-3 minutes.

Additional comments:


Serve over steamed rice or cooked noodles.
