Indonesian Peanut Sauce by colorful

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

2 tsp olive oil
3 cloves chopped garlic
1 finely chopped small/med yellow onion
1 cup natural peanut butter
3 cups vegetable stock
1 tsp chili powder
1/2 tsp black pepper
1/2 cup soymilk
Instructions:

Sautee olive oil, garlic, and onion in large pot w/ lid on over medium heat until tender (about 1 minute). Add peanut butter. Once peanut butter has melted, add stock and spices. Reduce heat and simmer 10-15 minutes (uncovered). Add soy milk, stir, and serve. Best eaten over whole wheat cous cous.

For a variation, add a 1 pound bag of frozen spinach to the onion/garlic mixture and sautee before adding peanut butter.
