Spinach-Smothered, White Bean, Giant Portobello Mushrooms

I've been experimenting in the kitchen tonight and came up with these. They turned out delicious!

Thanks! A couple of weeks ago, a friend (that eats Standard American Diet) put up a recipe and picture of Spinach-Smothered Chicken. You couldn't even see the chicken, only melted cheese and tomatoes. I thought, "Hey, I know how to make easy and delicious vegan cheese sauce. I bet that recipe can be made with a giant Portobello mushroom instead of chicken!" I looked at a few recipes online and started working in the kitchen last night. They really turned out great! I think searing the mushrooms in balsamic vinegar with veggie broth really made the flavors pop!
