This is what I had for lunch today.
I cooked some tofu, cashews, garlic, cilantro, and hot sauce together in a pan.
I then put the mix inside a romaine leaf and added some fresh carrots and cucumbers.
The smoothie pictured is not vegan but could easily be. It's a mixture of apple, banana, grape, carrot, cucumber, mint, kale, frozen berries, orange juice, almond milk, and a little greek yogurt (the only non-vegan part).
It looks pretty great nutritionally, but I'm a little worried, because that's a pretty small lunch (that is, good food, but not enough of it- six of them would make a better sized lunch).
Fruit smoothies are good for calories, but fruit (unlike veggies, beans, nuts, and grains) has not much protein in it. So I hope you don't fill up on that :)
