Hummus by mouse

Category: Dips/Spreads/Condiments

This recipe is suitable for a: vegetarian/vegan diet.

2 cups cooked chickpeas or 1 (19 oz.) can chickpeas, rinsed and drained

¼ cup vegetable broth

3 to 4 tablespoons lemon juice or to taste

4 tablespoons sesame tahini

½ teaspoon ground cumin

2 large cloves garlic, finely chopped

Tabasco sauce

salt, to taste

Combine chickpeas and broth in a food processor; process until very smooth. Add remaining ingredients; process until very smooth. Transfer to a serving bowl. Let stand at room temperature for 30 minutes to allow the flavors to blend.

Additional comments:

Serve with pieces of pita bread and/or fresh veggies for dipping. Also makes a great sandwich spread.

You can also add chopped green onions (both white and green parts) after removing the hummus from the food processor. Without the green onions, the hummus can be covered and refrigerated for up to three days.
