Calling for Vegan Desserts (9X13 pan if possible)

At the end of November, I will be taking dessert for 20 to an event. In the past I've baked a lot, but have close to zero experience with vegan baking. I've turned up tons of recipes on the web, but don't really know how to tell what's better or worse than something else.

It's really important to me that the dish be good, so I'm happy to test several recipes and see what works best. I'd like to bring two 9X13 cake pans, so if it's designed for a 9x13 pan that would be ideal.

I'll be giving the sample efforts to the local firemen and homeless population so I don't gain a bunch of weight recipe testing.

I think I'm going to try this first:

I'm thinking of adding some vegan chocolate chips to it before baking.

And I've made these before and they were pretty good but a bit oily:

so I might experiment with them.

If anyone has a really good brownie, cake, bar cookie, etc or any other 9X13 pan recipes that they swear by, I'd really appreciate them sharing.

that sounds like the recipe I use for cake, and it's no different than any with eggs, other than I don't think it keeps as long. I don't like vegan brownies. I used to love making boxed brownie with two eggs, while vegan brownies are good, they are not the same, so I just avoid them

I make this recipe for pot lucks and always bring the recipe.
Pumpkin Oat Bars

2 cups flour
1 1/3 cup oats
1 teaspoon baking soda
1/2 teas. salt
1 teasp. each cinnamon, nutmeg, ginger and/or allspice

Mix together well then add to dry--
1 2/3 cup sugar
1 T. ground flax in 3 T. water
2/3 cup oil (or half oil half applesauce)
1 can pumpkin (15 oz)
1 teasp vanilla (or rum extract)
preheat to 350 F
Mix well and bake in greased 9x13 pan for 30 minutes

Thanks! The pumpkin oat bars sound really good and nice for the event, which is Thanksgiving weekend. I will try them.

I'm not sure about the raw brownies, I'm trying to stay away from nuts for the event because I don't know if anyone has allergy concerns, but the chocolate chip bars look good. However, the brownies, with the nuts and dates, look perfect to give to hungry people outside: rich and full of nutrients, and can stay out for a few days. So I'll definitely make a batch of those too.

Also I love both your quotes about perfection. I struggle with perfectionism, which is a perverse kind of pride, so they're good things for me to keep in mind.

I've found recipes from the internet to be hit and miss, and what makes it more frustrating is all the people who give a recipe thumbs up without actually making it.

Check out the cookbook Vegan Cupcakes Take Over the World by Isa Moskowitz and Terry Hope Romero. It's a very good source and has been tested.

I edited the pumpkin oat bar recipe. I had written ..or swap half applesauce half oil and 1/2 cup oil, or something weird like that! and had flax goop in dry! Anyway, I'm gonna make those now as it's a chilly night and good to bake!
