I haven't found a recipe that makes fudgy brownies on par with the ones I ate when I was vegetarian. Do you know of any recipes? Preferably, not the healthy or gluten-free ones.

I think these are very good and they require no special ingredients that the average cook wouldn't have in his/her kitchen.

Also, here's a bonus recipe, for butterscotch brownies:

1/2 cup canola oil
1 cup light brown sugar
1 flax egg
3/4 cup sifted flour
1 tsp baking powder
1/2 tsp salt
1 /2 tsp vanilla extract
3/4 cup chopped walnuts

Preheat oven to 350.
Blend oil and sugar. Stir in flax egg.
Sift together flour, baking powder, and salt.
Combine wet and dry ingredients. Add the vanilla and walnuts.
Spread into an oiled 8X8X2 pan and bake for 25 minutes.
Allow to cool 10 minutes in the pan before cutting into 16 squares.

They're soooo good.

These is my favourite brownie recipe:

http://allrecipes.com/recipe/25112/zucchini-brownies/

Omni approved- these are requested by my family almost every time I see them. The are made with zucchini but they aren't "healthy brownies"- they are rich, fudgy and chocolatey. You don't notice the zucchini at all - you can't see it in the finished brownies unless you really look for it. I make mine without walnuts and add a handful of chocolate chips instead. The batter will seem VERY dry- the moisture comes from the zucchini. Don't worry, just stir everything well, in the same order as the recipe says and press it into the pan. If you overmix, I do find that it turns out a little more like cake than brownies. The frosting is vegan as long as you sub the milk for a plant milk (I prefer soy milk) and the margarine for a vegan margarine.

Ingredients:
1 cup + 2 tbsp milk of choice
1/2 cup + 3 tbsp oil
1 tbsp pure vanilla extract
1 cup spelt, white, or any purpose flour
1 cup unsweetened cacao or cocoa powder
1/4 tsp + 1/8 tsp salt
1/2 tsp baking powder
1/2 cup brown sugar, unrefined if desired
1/3 cup white sugar, unrefined if desired,
2 tbsp cornstarch
2/3 cup mini chocolate chips, (optional)

Whisk milk, oil and vanilla extract together. Preheat oven to 330F. Grease a pan and line with parchment paper.
Blend other ingredients in a bowl, pour the first liquid blend together and mix it. Pour it into the pan and bake for 16 mins.
You can use cocoa powder and vegan maple syrup for frosting.

Try it. It's delicious
