Suitable for vegans and everyone else.
NOTE: I used these ice cream popsicle molds to make these popsicles. In case you were wondering.
These are great in the summer when real chocolate chip cookies seem to warm and heavy. The only downside is that they take a little longer than some other vegan popsicles - if you want the chips strewn throughout your pops.
Gather up...
- 1 and 1/2 cups alternative milk – I used vanilla soy.
- 1/3 cup organic brown sugar.
- 1 and 1/2 teaspoon Fair Trade vanilla extract.
- 4 tablespoons mini chocolate chips or chopped organic chocolate bar pieces.
To make...
- Heat up your milk in a saucepan - don't let it burn!
- Once your milk is hot, mix in the sugar until it dissolves.
- Once sugar is dissolved, whisk in vanilla.
Now you have two options - the quick way or the better, but slower way...
The fast method
Sprinkle a tablespoon or so of mini chocolate chips into your popsicle molds. Then pour the milk mixture over the chocolate. Freeze, then eat once frozen. The downside of the quick way is that your chocolate won't be evenly distributed throughout your popsicle. They'll still taste good, just not as great as if you use the second method. NOTE: The image above is the fast way - as you can see the chocolate is mostly concentrated at the top of the popsicle.
The better, but not as fast method
- Pour your milk mixture into a bowl and place it in the freezer for one hour or until it begins to get slushy and frozen.
- Once your mixture starts to thicken, take it out of the freezer and carefully mix in the chocolate chips or chopped chocolate.
- Scoop ice pop mixture into ice pop molds. Freeze until solid.
With this method, your chocolate will be evenly distributed throughout your popsicle, just like a real chocolate chip cookie.

You'll like them. Everyone I've served them to can't believe they don't have actual raw cookie dough in them - a major benefit is that they're lower-cal than regular cookies.
