Bettine's 'secret' tiffin

This recipe is suitable for a: vegetarian/vegan diet

Preparation Time: 30 minutes

Serves:

Ingredients:

1 dessert spoon brown sugar

2 tbsps golden syrup

110g soft margarine

2 tbsps cocoa

75g glace cherries, chopped

75g raisins or sultanas

260g digestive biscuits

225g - 300g plain chocolate

Instructions:

Melt the sugar, syrup and margarine in a pan.

Put the biscuits in a bag and bash them with a rolling pin.

Take the pan off the heat and mix in the cocoa, cherries, raisins and crushed biscuits.

Press into a greased 20cm swiss roll tin.

Melt the chocolate in a bowl above simmering water, and spread over the biscuit mix.

Chill in the fridge for a few hours.

I had to share this as it's to die for! In the UK, digestive biscuits are sweet wholemeal biscuits. I'm not sure if they are available elsewhere. I used the SuperCook, Fairtrade dark chocolate (85%). It's better spread quite thinly to get a nice crunchy layer on top, so i would recommend using 225g.

Sure thing. Gotta love VB, if you aren't learning something new about veg*nism every day, you are learning something new about another part of the world. The way I knew this one is I have seen "digestive biscuits" in the International Foods section of my local grocery store.
