Gluten Free Oatmeal Cookies

Ingredients:

2 1/2 c GF Oatmeal (available from Bob's Red Mill, etc.)
1 c Brown Rice Flour
2 tbsp ground flax seed
1 tsp baking powder
1/2 tsp salt
3/4 c brown sugar
2 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
2 tbsp earth balance stick/other semi-solid vegan margarine
1 c hemp milk/vegan "milk"
1 c raisins
1/4 c chopped nuts (optional)

Preheat to 350*
Mix dry ingredients, including flax seed and spices, in a large bowl. Thinly slice the earth balance and evenly distribute it in the dry ingredients, mixing in as much of the dry ingredients as possible.
SLOWLY begin to pour in the hemp milk until it is sticky but not too liquidy.
Grease a cookie sheet. Drop cookies (1 1/2 inch balls) on the tray--if they seem dry, pat them down into a semi-flattened shape.
Bake 12-15 minutes.

You may substitute water for the "milk" in a pinch, however the recipe seems to have the best flavor and texture with the "milk".
I have never needed to use more than half of a cup of the hemp milk, and if you put in too much the dough will be too "batter-y" and not thick enough. The dough should be sculptable but not terribly crumbly. Just use the extra "milk" for consumption when eating your delicious cookies!
If you added too much liquid, scrape off the baked cookies, and toss in a bowl with some more flax seed and a little liquid until you get a dough. You can put this new dough in a 8 x 8 dish and bake at 350* for another 20-30 minutes and have bar cookies instead.
