Pancake Cake with Vanilla-Strawberry Filling

Category: Desserts - Cakes



Suitable for a: vegan diet





Ingredients:

For the cake batter:



1/2 cup Earth Balance

1/2 cup sugar

1 1/2 cup flour

1 1/4 cup milk of your choice

2 tsp baking powder

1 tsp vanilla

oil for the frying pan



For the filling:



1/2 cup Earth Balance

3/4 cup powder sugar

2 TB milk of your choice

1/2 ts vanilla

1/3 to 1/2 cup chopped strawberries





Instructions:

*For the cake:



Mix the EB, sugar and vanilla until the EB becomes a little softer. Gradually add the flour alternating with the milk.

Mix in the baking powder.



Pour 1/2 cup of the cake batter onto a small oiled frying pan (about 1/2 tsp of oil).

Cook over LOW heat for about 5 minutes or until the top part of the pancake gets puffy and bubbly.

Flip it over and cook it for 2 more minutes.

Repeat the cooking process for the rest of the batter.



*For the filling:



Mix the EB on high until it becomes lighter and fluffier.

Turn off the mixer and add half of the sugar.

Mix on low until the sugar and EB blend, so the sugar doesn't fly all over and you end up looking like Casper the friendly ghost! Then mix on high again for about 30 seconds.

Add 1 TB of milk, mix it in.

Carefully add the rest of the sugar until blended.

Add the rest of the milk and vanilla and mix for another 30 seconds.

Remove 1/3 cup of the filling and set aside.

Manually mix in the strawberries.



*Put it together:



Spread the filling between the COOL pancakes (if they aren't cool the EB will melt).

Take the 1/3 cup of filling that you set aside and spread it on top of the last pancake.

You can decorate it with whole strawberries and your choice of syrup!

This is the first recipe I post here! Yey! This is something I improvised when I wanted cake but didn't have an oven at the moment.
