Spicy Sweet Potato Hash

This recipe is suitable for a: vegetarian/vegan diet
Preparation Time: 30 minutes
Serves: 2-4
Ingredients:

2 tsp. olive oil or vegan margarine
1/4 cup veggie broth
1 sm. onion, diced
1 Lg. sweet potato (baked and cooled, from day before), diced
Half of a package of soy chorizo
Cooked brown rice or quinoa
Instructions:

Heat olive oil or margarine in skillet on med/high heat, add onions and saute two to three mins. Add potato, let brown a few mins. (if things are sticking use a little broth). When potatoes are browned a bit, add the soyrizo (and broth as needed for moisture and to prevent sticking), mix it all about and let it get a nice crust, turning in sections untill its crispy and caramelized as you like! Serve over brown rice or quinoa with a little hot sauce...Yumm-a-licious!
