Anything Goes One-Pan Granola

Category: Breakfast



Suitable for a: vegan diet





Ingredients:

3 cups rolled oats

3 cups total of any or all of the following:

-whole wheat flour

-wheat germ

-any type of seeds (sunflower, pumpkin, sesame, etc.)

-shredded coconut

-shredded wheat cereal

-any unsalted nuts

-nutritional yeast (don't use more than a couple tablespoons of this)

-cinnamon



1/2 cup oil

1/4 to 1/2 cup molasses, honey, or maple syrup

1/4 cup water

1 T vanilla or almond extract



up to 2 cups of any diced or small dried fruit





Instructions:

In a large pan (I use a 9x13), heat the oil, molasses, water, and vanilla extract at 350 degrees for a few minutes until it is warmed and thinned. Remove from the oven and stir to mix.



In the mean time, measure out and mix all your other ingredients (except the dried fruit) in a large bowl Transfer the dry ingredients into the pan with the warm liquid mixture and stir until coated. Bake at 250 for 2 hours, stirring every 20 minutes. When the cereal is cool, mix in the dried fruit and store in an airtight container. This makes about 7 cups

This recipe can easily be increased or reduced in volume and is really easy. Feel free to add/susitute whatever is lying around your house into the dry ingredients. Try not to use more than half floury type ingredients (flour, wheat germ, small seeds, etc.) or the whole cereal gets a little too grainy and crumby)



For faster cooking, spread the granola on cookie sheets and bake at 325 for about 30 minutes, stirring every 10 minutes.

I made some of this today, mine had



ww flour

almonds

pecans

& banana chips



and it is LOVELY.

I would make this now but the ingredients are too overwhemling maybe another time when I feel like making some actual effort in my own food preparation

Oh yay, so I'm not crazy for using whole wheat flour instead of wheat germ (can never find it here, though I could check the Whole Foods Market...)



In the kitchen today and need to make a new batch of granola, so will be trying this out! Thanks!
