Easy Festive Holiday Breakfast
Hate the calories of pumpkin pie or trying to avoid your aunt's dairy laden dessert? Enjoy a holiday style breakfast quick and easy that can be vegan or vegetarian by choice of milk!
1 or 2 cans of pumpkin puree
Per can:
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
1/4 tsp ground cloves
Splash of vanilla
Maple syrup to taste
Mix all ingredients well and refrigerate overnight to prepare for breakfast in the morning.
Malt o Meal or Cream of Wheat (or similar)
Cook desired servings of farina with water and a dash of salt. Just before pulling from heat, stir in desired pumpkin mixture per serving and stir thoroughly until warmed.
1 can pumpkin should produce at least 4 servings, 2 cans could feed 8-10.
Top with desired milk of choice and add extra maple syrup if wanted.
