Cinnamon & Nut French Toast
I tried this recipe from the Love Vegan Cookbook Series over the weekend and loved it! I wanted to share it with you guys. let me know what you think :-)
Cinnamon & Nut French Toast
Ingredients
¾ cup almond milk (you can use soy or coconut if you prefer)
1 ½ tsp ground cinnamon
2 tsp vanilla extract
6 slices of crusty bread (bread that is a few days old works best)
¼ cup chopped nuts
Maple syrup
Coconut or vegetable oil, for frying
Directions
Heat a frying pan with a little coconut or vegetable oil over medium-low heat and move onto the next step while it is heating up.
In a shallow dish whisk milk, cinnamon and vanilla.
Dip bread into mixture, making sure both sides are well coated and the bread has soaked up some of the liquid.
Fry the dipped bread for about 6-7 minutes and use a spatula to flip it halfway through. The French toast is ready when both sides are golden and the edges have gone slightly crispy. Repeat with remaining bread slices.
Drizzle maple syrup over the top and serve with fresh fruit.
