Vegan Banana Bread by glitterbug

This recipe is suitable for a: vegetarian/vegan diet.



1 c. whole wheat flour

1/2 c. all purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1 tbsp flax seeds

3 tbsp water

2 ripe bananas, mashed

3/4 c. sugar

1/4 c. canola oil



Mix together the flours, baking powder, baking soda, and cinnamon in a medium bowl. In a dry blender, grind the flax seeds to a powder, then scrape the sides down to the bottom with rubber spatula. Add the water to the blender an blend until sort of gooey (a minute or so). Combine the flax seed mixture, bananas, sugar, and oil in a large bowl. Add the dry mixture to the wet mixture and stir until just blended. Put in average size loaf pan coated with cooking spray. Bake at 350 for about 45 minutes, until golden brown and a toothpick inserted in the center comes out clean. Let cool in the pan on a rack for about 10 minutes, then remove it from the pan and let the bread cool on the rack a little longer.
