I'm gonna post my vegan banana bread recipe
Ingredients: 14 oz bananas (3-4, depending on the size, preferably ripe), 9 oz whole-wheat flour, brown sugar 3.5 oz, 1/3 cup vegetable oil, 1 soy yogurt (4.5 oz), baking powder (0.5 oz), 2 oz dried fruit (walnuts, hazelnuts, raisins), chocolate chips, 1 teaspoon of ground cinnamon.
Blend bananas with soy yogurt and oil. Separately, mix in a bowl: flour, brown sugar, baking powder, cinnamon, nuts and chocolate chips.
Combine the two mixtures, stir and pour into a loaf pan lined with parchment paper.
Bake in preheated oven at 350F° for 40-45'.
Personal trick: add to the mixture some coarsely chopped walnuts or hazelnuts and/or chocolate chips. And use ripe bananas!
