Tropical Salsa

This recipe is suitable for a: vegetarian or vegan diet

Category: Appetizers and Dips

Ingredients:

-----------------------------------------------------

(I think this would work for a raw-foods person too?)

1 cup diced peeled ripe mango

1 cup diced fresh or canned pineapple

1/4 cup finely chopped red/purple onion

1/4 cup minced fresh cilantro

1/4 cup fresh lime juice

2 teaspoons ground cumin

1/8 teaspoon salt

1/8 teaspoon black pepper

1 red or green jalapeno pepper, seeded and minced

(1 tsp sugar is optional - I use it because I like it a bit sweeter)

Instructions:

-----------------------------------------------------

Mix all ingredients, chill and serve with chips.

Additional comments:

-----------------------------------------------------

This stuff is SOOO good on a hot day.

I'll put black beans and/or avacado in it, and eat it as a salad sometimes!

Just made this again today and didn't have cilantro - so I put fresh MINT in it, and left out the black pepper and cumin... (I know, sounds weird) it was SO good!!!!!!!!!!!!!!!!!!!!!!!!

Oh wow that's spicy. Good, though. I didn't put cilantro because it tastes like soap to me, maybe that's what did it?

Have you ever used tofu in this? and if so do you use the firm or soft?

Thanks

To me, all salsa is better when it includes corn. But that may be just me.

Q: How many poets does it take to change a light bulb? A: 1001...one to change the bulb, 1000 to say it's already been done.
