Artichoke Appetizer Nibbles

This recipe is suitable for a: vegetarian/vegan diet.



24 small wonton wrappers (3-inch squares)

Olive Oil

2 jars (6.25 ounces each) marinated artichoke hearts

1/4 cup chopped red bell pepper

1/4 cup chopped mushrooms (optional)

1/3 cup sliced pitted olives, black or Kalamata

1/4 cup (1 ounce) YOUR CHOICE: fresh grated Parmesan OR Vegan-Parm (Parmesan-style) 'cheeze' OR Feta Cheese

1 garlic clove, pressed

1/2 cup mayonnaise or Tofu Mayo



Preheat oven to 350°F. Press wonton wrappers into a mini-muffin pan. Brush lightly with olive oil if desired.

Drain artichoke hearts, reserving marinade for another use (makes a great salad dressing!!)

Pat artichokes dry with paper towel. Chop artichokes and red pepper.

Combine chopped vegetables, olives, cheese, garlic and mayonnaise.

Fill prepared muffin cups with artichoke mixture. Bake 12-14 minutes.

Let cool in pan 2 minutes. Carefully remove and serve warm.

Wonton Wrappers can be found in a vegan version in many supermarkets and health food stores - SOME have eggs, check your label if you have questions.
