If you like rhubarb you seriously have to try this
1 Put 500g rhubarb cut into 2cm pieces into a large pan with 200g soft brown sugar and a splash of water.
2 Cook over medium heat until rhubarb is soft (10 mins approx)
3 Add 1 medium onion peeled and finely chopped, 2cm piece of ginger grated (2 teasp ground if fresh not available) and 100ml red wine vinegar
4 Bring to the boil and simmer for 20minutes stirring occasionally until chutney like texture is reached.
If you bring it off the stove and it appears to be not quite ready when cooled just stick it back on and give it another 5 minutes or so.
This is excellent with veggie sausages and roast potatoes
