This is base on the recipe from 1000 Vegan Recipes, Robin Robertson
I swapped the 2/3 oil for 1/2 cup applesauce. Switched cranberries with walnuts:
2 cups flour (next time will use all purpose whole wheat)
1 1/2 teasp. baking powder
1/2 teasp. baking soda
1/2 teasp. salt
1 cup solid pack pumpkin
1 cup brown sugar
1/2 cup applesauce
1/3 cup soymilk (I used vanilla) or other non dairy
1 teasp. cinnamon
1/2 teasp each allspice, ginger, and nutmeg
2/3 to 1 cup chopped walnuts
Preheat oven to 350F. and grease a 9 inch loaf pan.
Mix baking powder and soda and salt with flour. Mix wet ingrediants, then mix together. Use a greased 9 inch bread pan.
Bake at 350F. for about 50 min. Book called for 1 hour but mine was done in 50 min.
I gave each of my cats 1T of the remaining pumpkin.
Next time I'll double the recipe as 1, 15 oz. can, has 1 1/2 cups of pumpkin.
