Edamane in the shell! So much fun to shell and eat, and just need to steam. Prices really vary on these, I get them from an Asian market
Spread cooked, dry, garbanzos on a baking sheet, season, and bake at really low temp until crispy. I find them crispier without any oil
Let them experiment with seasonings for bean dip puree for veggies
Fat free refried beans
My kids really liked apple and veggies sliced thin on a mandolin
