I posted this on the raw food forum but maybe here I may get some help too. I was out in my garden today picking green beans and noticed my black bean plants had a lot of pods. I picked them without realizing whether or not they were fully mature. They are now mixed together in a bag with my green beans. I opened up a pod or two that looked flat (they look just like string beans but the black bean pods are more flat) and they were only half black. They hadn't fully turned black yet. From what I have been reading - most websites talk about harvesting the Dried bean pods but none of them talk about harvesting fresh immature black bean pods. My question is.... can i eat them like I would string beans if they are not fully matured? If not can I dry them as immature beans? Not sure what I should do and need some help!

ahhhh.... well I found out they are toxic raw unless grown to maturity and died on the vine and then cooked. So ... yeah I wont be eating them anytime soon!

I was thinking the same thing . beans are toxic when they're unripe
