LOVE IT! Here are mine! We do kabobs year-around!
And one quick tip. If you freeze your firm tofu first, then defrost it before using with kabobs, it changes the texture, making it even more firm so it holds on a skewer for grilling MUCH better.

Also if you grow your own veg and have new potatoes ... they are lovely on a skewer and grilled!

I'm actually glad for that spam because my husband and I are planning a barebecue soon, and I love the fruit and vegetable skewers!

Anyone have a favourite recipe for vegan potato salad?

I've always just done the basic boring recipe but with Vegenaise instead of mayo. PETA has a good example, this is exactly my recipe except I leave out the celery and add diced pickles instead: http://www.peta.org/living/food/crea...-potato-salad/

I've been wanting to try it with avocado though, this recipe from Forks Over Knives looks delicious but I haven't tested it yet: http://www.forksoverknives.com/recip...cado-and-dill/

Thank you! I'll use that one. (The standard one, because I'm mildly allergic to avocado. How stupid is that?)

Aww, that sucks! Avocado was the main thing that helped me fill the creamy void left by cheese when I went vegan. Luckily there are many other creamy vegan things to choose from.

I really love guacamole, too. Sometimes I'll eat it anyway, but it always makes my lips and throat itch. Sometimes it's worth it!

If it makes you feel better, I'll fix you dinner because I hate avocado, and I do not mess with allergies at all. But, I have found a guacamole recipe with asparagus , as well as a guacamole recipe with edemame, and one with peas in it. The woman with the last recipe isn't vegetarian, much less vegan, but the recipe is doable (accidentally vegan--I ain't telling her). Anyways, I hope these recipes help.
