Right now, I am having a late breakfast of a tofu scramble (greens, bell pepper, shallot, garlic, silken tofu, dash of dijon mustard and soy milk to make it creamy) and it is very very tasty. I was on a no-fat added diet for a while and recently started adding some fats and fattier foods like tofu and nut butter to my diet and am feeling much more satisfied.

 

I will also be having steel cut oats with a dash of soy milk, maple syrup, and almond butter.

Coffee with so much soy milk it was pretty much cafe-no-lait. One thick slice of toasted home-baked whole-wheat-oatmeal-dill-sunflower bread, with avocado slices on top. Sea salt and sriracha on the avocado slices.

Made dinner at my mom's place. I used up all the leftovers in her fridge to make a huge dish of "burrito filling" that we ate as is. It was a mix of sweet onion, black beans, sweet potato, summer crisp corn, long grain brown rice, chopped tomatoes, avocado & oodles of spicy salsa. Really taste for a quick and extremely budget friendly meal!

A toasted bagel with vegan mayo, veg sausages, avocado slices, gherkin, iceberg lettuce and sweet-smoky ketchup. It was messy, but delicious.


That awkward moment when your partner walks into the kitchen to find you huddled in the corner with an open container of nooch and a spoon and your mouth encrusted with little flakes...
