hello!

does anyone have a favorite lentil soup recipe they wouldnt mind sharing? i always kind of just make stuff up based on a few recipes. my mother is looking for one thats not too thick.

any suggestions are appreciated!

I usually make a really basic lentil soup using canned vegetable broth and chopped onions. I cook the lentils in the broth with the onions, then season it to taste. This usually involves garlic and whatever other spices are laying around that sound good at the time.

i love lentil soup, try this soup similar to dal :

1 cup lentils (rinsed and sorted, i sometimes use yellow or red lentils)

3 cups broth

1 sliced onion

2 sliced carrots

2 cloves chopped garlic

1 cut potato

1 rib of celery

1 chili pepper (if you want)

spices:

turmeric, cumin, coriander, salt



saute onions in a bit of oil, add the spices, add carrots. after a few minutes and onions have cooked, add garlic. if you have some white wine, up the heat and add about 1/4 cup, cook off alcohol. add broth and the lentils, simmer covered on low heat for about 20 min, then add the rest of the veggies and simmer for another 20 min.

This is my favorite!



Lentil Soup



3 C lentils

2 med onions

2 – 3 carrots

1 bulb garlic

3 potatoes

2 – 3 stalks celery

2 mild green chilies w/seeds

lg can of diced tomatoes

1 T olive oil

1 T Cumin

1 t black pepper

2 t salt

¼ to ½ C chopped cilantro



Sort and rinse lentils. Cover with water and bring to a simmer.

Chop onions, carrots, celery. (Brown if you like) add to pot and continue to cook.

Toast cumin seeds, grind and add to frying pan with minced garlic, and olive oil. Cook until golden brown. Add to pot. Add tomatoes, salt and pepper and cook about an hour. Add chopped potatoes and cook about another hour.



Right before serving, add fresh cilantro.



Excellent with garlic bread!



This makes A LOT, so you might want to halve this recipe.

Yeah, it isn't thick at all. I usually use 2 cans of broth for it and I just pour lentils in. I'm bad when it comes to measuring things.



Both of the kids are doing great. Freya is STILL coughing and sneezing a little bit, but nothing major.

You're welcome. I forgot to say that I always add more water as it's cooking.

You can make it as thick or as thin as you like.
