So, I've always been one of those people who puts everything in the refrigerator. However, I quickly found out that vegan baked goods get gummy in the refrigerator and are best left out, and eaten within a few days.

Here's my question though--what about baked goods with frosing on them? I recently made cupcakes with frosting that included margarine and soymilk in the ingredients, clearly both refrigerated items. So, is that still okay to leave out on the counter?

i can't really answer your question, but thought i'd mention what i usually do. after baking, whatever is left on the counter at the end of the day gets wrapped individually and put in the freezer. i might leave one cookie or piece of cake out if i am planning to have it the next day, but i usually just freeze everything. when i want to eat a sweet, i take out one of the wrapped goodies from the freezer and let it sit for a while until it defrosts. (doesn't take long at all, less than an hour i think.)

I freeze most vegan baked goods, but I don't really care for frosting so I'm not sure about that.

I never refrigerated my baked goods with frosting containing milk and butter before therefore it has never occured to me to refrigerate them now that I use soy milk and margarine. Ours only last a few days (because we are pigs!) but they are fine. They don't spoil.
