Can anyone give me simple ideas for a vegetarian buffet please! It's for Sunday. I've got some vegan friends coming too, so some vegan suggestions would be handy as well.

Vegan Mac and Cheese...I make one very similar to this recipe:

It is SO freakin' good. This recipe makes a huge portion...I always cut the oil in half and it's still delicious. My other variations to the linked recipe - I use less salt and add a teaspoon or so of turmeric and a tablespoon of cayenne pepper to make it spicy. I tried this for the first time at a vegan potluck and I couldn't believe how scrumptious it was...AND how lucky I was that the person who cooked it brought copies of the recipe.

Thanks! I was reading today how pepper enhances nutrient absorbtion by a huge percentage!

If you could do something like a mexican veg*n buffet it would be easy.

A make your own taco bar - beans, meat sub, tortillas, tomatoes, onions, cheese, olives, cilantro, salsa, avocados, etc.

Spanish rice

Cheese enchiladas

Veggie tamales
