portabellas for grandma? - VeggieBoards

hey, anyone have any brilliant ideas of what i can make with portabella mushrooms for my grandma this afternoon? i recently made a zucchini dish with baby bellas, and my grandma happened to try it and simply raved about the portabellas. i don't think she'd had them before, or at least, not really tasted them.

today i'm making her dinner. we're going grocery shopping, so really i can get ahold of any ingredient for any dish, and i want to make something special. she's diabetic and really trying to control her health and weight with diet, not medication, which i think is really awesome. i'm encouraging her to be as veggie as she can be!

so. portabella ideas? por favor?

I've often seen larger portabellas grilled and served in sandwiches.

And it's great that your grandmother is leaning towards vegetarianism. My great-grandfather has been a vegetarian for years and is as healthy as a mule.

I like them sliced and sauteed and then added to a gravy (use any veg brown or cream gravy you like) to make a portabella stroganoff. Really brings out the "mushroom" flavor.

You can serve it over rice, quinoa, smashed taters or noodles.

Cream of mushroom soup is good too.

Or make a vegetable and rice - or quinoa - pilaf and "stuff" the mushrooms with the pilaf and bake them...
