Does anyone have a recipe for vegan cranberry pumpkin bread? It's become a family tradition at my house to make it for Christmas. Unfortunately, the recipe we have is loaded with eggs. Thanks for your help.

I actually just baked banana bread and no problem. A little crumbly, but I'm sure that could be fixed with applesauce or something. As for the bread part, all it was was three banana's. flour, 1/2 cup oil, some baking soda and that other soda thing..sorry memories tweeking. Turned out well. I got the recipe out of the How it all Vegan cook book..

Here is one that is already vegan

if you want it to have oil/butter in it, use that in place of the apple juice.

I think it sounds really good and here is my favorite recipe for Pumpkin Bread,

it is low-fat and you can just add some cranberries to it in place of the raisins

I always have made them without the raisins and nuts.

I have made cranberry bread without eggs, sugar, or oil using juice concentrate for all three. It comes out moist, sweet and delish. Just get a couple of those frozen juices (apple cranberry would be good) and use in place of all wet ingredients. I guess you could determine the amount based on how many eggs, oil and water are in your recipe. I make great muffins using juice concentrate too...
