sour cream:

2 cups firm silken tofu (you can use regular, although it will be a bit grainy)

1/4 cup light, natural oil like sunflower

3 tbsp lemon juice or vinegar

1/2 tsp salt

1 tsp granulated beet sugar

Blend all ingredients until smooth. Taste and adjust seasonings and lemon juice, if desired

I love my tofu ranch!

My recipe is:

1 block of firm silken tofu

1/4 cup red wine vinegar (any is ok, but I like the red the best)

1/2 lemon worth of juice (give or take)

1/2 teaspoon garlic (I like the pre-minced better, but powder is ok too)

1 teaspoon celery salt

1 teaspoon dried dill weed

1 teaspoon dried parsley

1 teaspoon black pepper or lemon pepper

1 teaspoon onion powder

oil for combining (I use extra-virgin but just about anything's ok)

Place all the ingredients (except the oil) in the processor. Pulse a few times to combine then slowly drizzle in the oil until the mix looks like dressing. Chill and enjoy!

Kreeli has a good sour cream recipe but the one I found is a tad more simple.

Sour Cream (from VegWeb)

1 block of firm silken tofu

1/4 cup lemon juice

1/2 teaspoon rice vinegar

1/4 teaspoon salt

Place everything in the processor. Whirr to combine and enjoy!

There's a recipe for vegan yogurt on vegweb at this link but I haven't made it yet, so I can't tell you if it's any good or not.

cool.. thanks nicole... I have seen a few recipes... but it is hard to know which ones suck and which ones are good, hence the reason I asked here knowing someone has probably made a recipe or two of alfredo at one point or another )
