Hey, all. I was wondering if anyone had a recipe for vegan seven layer cookies (the ones with red, green, and yellow cake-ish layers). They were my boyfriend's favorite desert before we became vegan, and I'm trying to make them for christmas. Thanks.



Also, how is egg replacer in cookies? I try to avoid it, but only on principle, I've never had any.

Well, I'm about to experiment sometime between now and Monday...I don't think my original recipe will work well veganized because it has a lot of eggs in it....I will let you know how they come out!

Well, I'm about to experiment sometime between now and Monday...I don't think my original recipe will work well veganized because it has a lot of eggs in it....I will let you know how they come out!

Well, I made them today and they didn't turn out very good. They taste just fine but they came out too soft/light/cakey. I'm thinking I either put too much almond paste or not enough flour or both. Right now I have them weighted down in the fridge so I'll see how they are in the morning once I ice them with the melted chocolate. They are definitely worth another try in an attempt to improve them.
