From Vegan Planet:
1 T olive oil
1 garlic clove
1 or two jalapenos, to your taste, seeded and minced
1/4 t ground cumin
1 1/2 cups or one 15-ounce can black beans, drained and rinsed
1 T tamari or other soy sauce
1 t fresh lime juice
1/3 cup water, or more as needed
2 T minced fresh cilantro leaves
Heat the olive oil in a large skillet over medium heat. Add the garlic and jalapenos and cook for 1 minute. Stir in the cumin, beans and tamari and simmer for 5 minutes to blend the flavors.
Transfer the mixture to a blender or food processor, and the lime juice and water, and process until smooth.
Transfer to a medium-size saucepan and add the cilantro and more water, if necessary, to get the consistency you prefer. Taste and adjust the seasonings. Heat over low heat, stirring until hot.
Makes about 1 1/2 Cups.
