I was going to make the recipe for pumpkin bread from the last Vegnews issue, but now I can't find it anywhere! Does anyone have this recipe? I could always make a different recipe, but I really liked that one.

I don't subscribe to vegnews but if you're in a pinch here's the recipe I use:



12 muffins or 2 loaves



-Wet ingredients

1/3 c oil

1 ½ c sugar

2 equivalent eggs (I use Ener-G)

1 c canned pumpkin

¼ c water



-Dry ingredients

1 2/3 c flour -option- replace 2/3 c with flax meal

1 t baking soda

½ t baking powder

½ t salt

½ t pumpkin pie spice

½ t cinnamon



Pre heat oven to 400° if making muffins or 350° if making bread

Beat together oil, sugar, and eggs. Add pumpkin and water

Sift together dry ingredients, add to wet, mix until smooth

Pour into lined muffin tin or greased bread pans

Bake 12 muffins 20 m

2 9x5 loafs 1 hr
