As the only wheat free-vegan on a staff of 17 RA's, I'm going to have to provide my own entire meal, with enough servings of said food to entice the rest of the staff . . . all on a college budget. My thoughts are as follows (in order of prep):
Oven baked potatoes (1/4 inch medallions with salt, various dried herbs baked on a pan with olive oil)--I'm thinking of doing sweet potatoes too
Quinoa (boiled, salt, garlic, paprika, dry onion flake) with stir-fried vegetables (I usually do some carrots, onions, yellow squash, zucchini, green peppers, etc. Really just what I have hanging around in my room)
Baked apples--1/8 sliced apples with cinnamon, nutmeg, etc.
To die for gluten free oatmeal raisin cookies

I feel like I'm missing something though--is there a way I can turn chopped seeds and nuts into a stuffing like concoction? What should I do to balance it all out?
