Lemon Macadamia Cupcakes



Ingredients:

1/3 cup canola oil

¾ cup granulated sugar

¼ cup soy yogurt

1/3 cup soy milk

¼ cup lemon juice

1 tablespoon finely grated lemon zest

1 teaspoon vanilla extract

1 cup plus 2 tablespoons all purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1/3 cup roasted macadamia nuts, ground

½ cup roasted macadamia nuts, coarsely chopped



Preheat oven to 350 degrees F. Line a muffin pan with cupcake liners. In medium bowl, stir together oil, sugar, yogurt, and soy milk. Add the lemon juice, lemon zest, and vanilla. Mix to combine. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Add the flour to the liquid mixture in two batches, mixing well after each addition. Add the ground macadamia nuts and beat until well incorporated. Fold in the chopped macadamias. Fill cupcake liners three quarters of the way full. Bake for 20 to 22 minutes, until a toothpick or knife inserted through the center comes out clean. Transfer to a cooling rack before frosting.



Lemon Buttercream



¼ cup shortening

¼ cup margarine, softened

2 cups confectioners’ sugar

2 tablespoons fresh lemon juice

2 teaspoons finely grated lemon zest

1 teaspoon vanilla extract



In a small bowl, cream the shortening and margarine until well combined. Add the confectioners’ sugar in roughly ½ cup additions. After each addition of sugar add a splash of lemon juice and beat well with a handheld mixer. Add vanilla and beat for another three to five minutes until smooth, creamy and fluffy. Wrap tightly with plastic wrap and refrigerate until ready to use.

Mmm .. . that ravioli looks really good.



Here's some Chili and jalepeno cornbread I made last night... I'm not sure if it qualifies as "porn" or not, though. It was fantastic, but somehow I feel that it should be more decadent to be considered porn?



Note the heart shaped cornbread!

Thanks for typing that out for me I was too tired to last night and was going to type it out today but it was already done



I'd just like to add that they recommend adding 1/2 cup of white chocolate chips, if you can get your hands on them (we order them online). I bet these cupcakes would be great with them!

Hehehe.... Yes, the cornbread is yummy . . I got the recipe from choose veg. Here's the link.



I use 3/4 ww flour, and 1/4 white . . . Brown sugar, not raw sugar . . . and a bit less sugar because I used sweetened soymilk. Also, the heart was pretty, but it was a bit dry in that pan, I think it was too thin. Try to make it thicker - in a smaller pan. I just stirred in 1 chopped jalepeno pepper, but doing it again, I would put more, I couldn't taste it all that much. Good luck - and it is really good, esp. hot and smothered with eb!

So this is definitely not decadent, but so beautiful, I wanted you all to see. It's tea made with lemons and fresh thyme and lemon thyme from the garden - for hubby's sore throat.
