OOOoooohhh... Eleven, where do you live that you have access to fresh Hatch green chiles? I have to have frozen ones SHIPPED to me 'cause no one in the Pacific Northwest carries them, or even knows what they are!!

I passed through the Mesilla Valley earlier in the week and picked them up.



I lived in Las Cruces for several years during my wandering the desert years. I miss the area. It's a terrific part of the country.

First meal cooked in a college kitchenette! It's not much considering I'm lacking a lot of ingredients from back home, but it's better than what most college students eat!

It took some thinking to get a quesadilla to hold together with out any sort of binder, but these worked out pretty well. They even kept together when I dipped them in a bowl of nacho sauce. Is it still a quesadilla if it doesn't have cheese?

I made them for a quesadilla competition on an omni-food site. They were pretty cost effective, though. Maybe I'll call them Peso-dillas.

That looks pretty awesome! Hey, I love that kind of tofu, but I've never seen it in a store. Does it have a special name? Where did you get it?

It's flavored five-spice tofu. I get it in asian supermarkets, but they might have it in health food stores too. They taste so much better then regular firm tofu.

I don't think this stupid city has any Asian supermarkets. *grumblegrumbleImisscalifornia* I'll keep my eyes peeled though on my next trip to a "health food store" (the closest we have are big chains like Wholefoods, plus some pathetic hole-in-the-wall with some whey powder and soy milk on the shelves.)

This is a mainstay for family gatherings, pot lucks or Labor Day barbecues. I'm not sure if it should be called a salsa or slaw, but it's good piled on a corn chip, as a taco topping, or just eaten with a spoon.

Most my meals are home-made. They are mostly all healthy and nutritious and made from scratch. I rarely spend more than about $2/meal. It's definitely the way to go.



I have an ear of farm-fresh corn in my fridge. I am throwing that on the Foreman Grill when I get home and making some pan-fried potatoes and broccoli with onion and garlic to go with. Mmm. Thanks for sharing.

This is the very first of your recipes that I used. I have made it several times and it always goes in minutes. Excellent recipe!

Yep. I analyzed the recipe on http://www.nutritiondata.com/

According to them, 1 serving is 29% of your daily iron intake. Plus 4 cups of it disappeared in half an hour.
